Easy Healthy Chicken Ranch Salad Recipe

Who said salads can’t taste amazing? This healthy chicken ranch salad recipe is a healthy, filling, relatively low-calorie salad, loaded with protein and important nutrients. It’s so easy to make with just a few simple ingredients. For the extra taste we add a healthy homemade dressing!

The reason I like this salad so much is because it is so easy to make, it looks beautifully colorful and it’s loaded with flavor. It is made with lettuce, corn, red onion, cucumber, cherry tomatoes, avocado and chicken breast. All in all, a balanced meal that is relatively lower in carbohydrates, contains a great amount of healthy fats from the avocado and of course, a high amount of protein because of the chicken.

How to make this chicken ranch salad

Start by making the dressing by combining greek yoghurt, garlic, chives, parsley and lemon juice. The exact amounts are listed below in the ingredient list. Mix it well and let it rest in the fridge while you prepare the salad. To make the salad, start by cooking the chicken breast in a skillet until it gets browned. Then make the bed of the salad by placing the lettuce on the bottom, followed by cucumber, corn, red onion, cherry tomatoes and avocado.

Tips to make this chicken ranch salad

Make this salad vegan by substituting the chicken breast for another source of protein that is vegan and using a vegan yoghurt for the dressing. Or just leave it out completely.

Use another kind of lettuce as the base. There is so many kinds of lettuce and they all have varying levels of specific nutrients. However, lettuce be clear that they’re all a great source of antioxidants, fiber and essential nutrients. You can choose between leaf lettuce, romaine lettuce, iceberg lettuce and the list goes on.

Change up the dressing. The dressing I use in this recipe is a guarenteed succes, but you can also make another dressing that you prefer! Many dressings go well with this salad. You could make a more sweeter dressing/marinade with maple syrup for example.

Use this salad as mealprep. You can store the salad tightly sealed in the fridge where it will stay well for 5 days . Just make sure you add the dressing when you take the salad out the fridge and not before.

Ingredients
  

Salad
  • 1 chicken breast
  • 1 tbsp olive oil extra virgin
  • lettuce leaves
  • 1/4 red onion
  • 4 tbsp corn
  • 1/2 cup cherry tomatoes
  • 1/2 avocado
  • 1/3 cucumber
  • salt and pepper
Dressing
  • 1/2 cup Greek yoghurt
  • 1-2 garlic cloves
  • 1 tbsp lemon juice
  • 2 tbsp chives, parsley and dille in total

Method
 

  1. Start by making the dressing by combining the greek yoghurt, minced garlic cloves, lemon juice, chives, parsley and dille in a jar. Leave it in the fridge while preparing the salad.
  2. Cut the chicken breast in small pieces and cook it in a skillet until golden brown. Add salt and pepper to taste.
  3. Lay the lettuce leaves in a bowl, followed by the corn, cucumber, red onion, cherry tomatoes and avocado. Lastly top it off with the chicken breast and finish it with the homemade dressing. Enjoy!
